What You Need:   

a.       10oz (300g) frozen garden peas
b.       Half tbsp mint, finely chopped
c.        Quarter tbsp chives, finely chopped
d       1 tbsp crème Fraiche
e.       Lemon Juice
f         50g of breadcrumbs
g.       1 garlic clove
h       50g grated Parmesan
i         40g butter
j         Half tbsp olive oil
k        18 king scallops

How To:
                  a.       To start with the puree: bring a pan of salted water to boil. Cook the peas for 3 minutes                       or  until they become tender.
                 b.       Drain them up and rinse in cool water and place them in a bowl with mint, chives, crème                     Fraiche and lemon juice.
                c.        Blend these to an affine puree using a stick blender.
                d       Now, moving to the toppings, mix the breadcrumbs, garlic, and Parmesan cheese in                               a small  bowl.
                e.       Melt half the butter with half of the olive oil and add the bread crumbs mixture and fry                         until it turns golden in color.
                f         Heat the remaining butter and olive oil in a frying pan and add scallops.
                g.      Cook for 1 to 2 minutes on each side.
                h       Present your dish in the most alluring way of serving the plates by placing the scallops on                   top of the pea puree.

2. The Roasted Lamb Main Course

What You Need:

a.       Leg of lamb 2.50 kg
b.       1 garlic bulb
c.        A bunch of rosemary
d       1 tbsp of olive oil
e.       2 carrots, diced in large chunks
f         1 onion, cut into quarters
g.       A glass of red wine
h       2l beef or lamb stock

How To:
a.       Stud the lamb with garlic and rosemary.
b.       Use a sharp chef knife and make small incisions all over the meat (minimum 30).
c.        Take 4-5 garlic cloves and thinly slice them and make a slice in each of the incisions.
d       Now you need to pull off the small springs of the rosemary and insert into these incisions.
e.       Once this is done, cove the lamb well and refrigerate.
f         Preheat the oven to 190/170 degree Celsius. Heat a large frying pan and roast the lamb all over to brown.
g.       Scarlet carrot, onion and the remaining garlic and rosemary. Pour in the red wine and stock and place the browned lamb among them.
h       Roast for about 1hr 45mins. Remove the lamb and let it rest in a warm place.
i         Make the gravy for the dish by pouring all the stock into a saucepan . Remove all the vegetables and herbs and keep it at a simmer.
j         Skim off any fat that comes to the surface and once you feel the gravy is thick enough, take it off and serve the lamb with the potatoes.

3.       The White Chocolate Fruit Tart


With this white chocolate fruit tart, your Easter can never get any sweeter. Making tarts for Easter has always been a tradition. What you need

a.       ¾ cup of butter
b.       ½ cup of confectioners' sugar

d       1 pack of white choco chips

f         1 pack of cream cheese
